Pantry Dinners April 12-18

I’ve had a few requests to start posting my budget shopping list and meal plans again now that money is tight and we are all at home more. Since I am not shopping regularly and I am sort of at the mercy of what is in the store I am going to post my weekly meal plan eating out of my pantry. We have a pretty basic panty, I buy most of my pantry staples out of the bulk bin and store in half gallon jars or other containers. I do buy canned goods, but don’t buy much more than a few weeks worth because we have a small food storage area. We also have a chest freezer that has some beef from Mom and Dad’s cows and extra fruit & veggies that I pick up on sale from time to time when we have a little extra money.

This is our plan for this week. I do not use recipes for the most part but if you need recipes these are simple and easy to look up online. I’ll link to some recipes that are close to what I use here:

Pizza – I make pizza dough in bulk and freeze it, we’ll use one from the freezer this week. If yeast doesn’t show up in the stores again soon though I’ll use this recipe – https://houseofyumm.com/no-yeast-pizza-dough/
Mac & Cheese – Use a roux to make sauce. It is just better. I make extra to put on potatoes later in the week. We mix in veggies, sausage, or other mix-ins to make this fun. https://www.delish.com/cooking/recipe-ideas/a26014072/how-to-make-roux/
Stir Fry – We use leftover meat for this. We still have quite a bit of pork left from the 8 pound roast I made last week (stored in the freezer) we will use Hawaiian Time teriyaki sauce bought from the restaurant, I’ll make sticky rice and steam whatever veggies we do have on hand (out of the freezer California blend)

The only thing I will have to get this week is fresh lettuce for salads as a side for most of these dinners. Soon this will be growing in my garden along with some other veggies! I’ll be back next week with another menu! Stay home and stay safe my friends!
